Canadian bacon comes from the loin, Ham comes from well the ham lol and they are cured differently and our Canadian bacon is smoke 12 hours while the Hams are around 40 hours, there is cottage bacon too that comes from the front shoulder if you get cottage bacon you don’t get pork steak they come from the same part
