Ok I gotta put this in here but not cuz of Billy lol 😂

Would bleu (blue?) cheese work on jalapeño poppers? Years ago I despised it then at work a girl invited me to try a Cobb salad that had bleu cheese. I was like nah and she insisted. Loved it ever since.
It's hard to pick a Cheese you can't deep fry brother:) I say go for it! Specially with the spicy! .... damn I want that now....

Willie; you're missing Blue Cheese!

The hottest way top prepare a jalapeno is to bake it whole without cutting it.......holy shit will that be hot. Yeah, these are baked. I don't mind breaded vegetables cooked in oil but jala's are a pita to get anything to stick to.
Anyway, when I bake these the cheese and bacon sinks and the salsa rise and sort of mixes together...yum. Sometimes I will use tomato sauce but only if the cheese choice is mozzarella. Cheddar and such, don't get anything red :)
But I never met a jala popper I didn't like :D

Wow, nobody guessed it??
It seems so damn obvious in hindsight....I'm kicking myself sooo hard in the ass right now!

(Though, if I were a judge, I'd have to give it to Uncle B for closest guess, with Hot Sauce...Begrudgingly, cuz that sumbitch already has all the contest luck!!) :cautious:

And, of course, another layer of cheese...

...Shaddup, Billy!!

;):LOL:

The guessing games are always fun and appreciated @Willie

Do you happen to have a go-to salsa recipe?

Not too often, but I'll occasionally pick this one up from Trader Joe's - honestly haven't tried a homemade version.

This is what I call winter salsa. It uses mostly pantry items. It's pretty good and I use it as a base recipe when making fresh. You can push any of these ingredients harder if you like, but this is a good jist. I like Hunt's Petite Diced if I'm using canned. Always better after a night in the fridge too.
t = teaspoon
T = tablespoon

this is pretty close to what I used to make in the production kitchens too. Coupla cans of #10 whole tomatoes drained in a hotel pan with some half onions and jalapenos, roasted until it was carmelized then blended up with seasonings. Reminds me I should make a batch.......

I love fresh salsa and all but peeling peaches/tomatoes can go take a hike.
